"Esquive" is an opening made in the cask, designed to allow easy insertion of the cannula without disturbing the lees. Located in the lower part of the barrel, its position can be adjusted to suit your needs, provided that a minimum distance from the chime is maintained and that it is centred on a head stave.
✅ In practical terms, it helps to:
• Rack the wine with precision
• Reduce handling and preserve clarity
• Improve efficiency during cellar operations
