The research carried out by Doctor Pascal CHATONNET has made it clear that the robur oak is superior to the peduncle oak in its contribution to wine.
His work has revealed the diversity of what sessile oak brings to the wine according to its texture, and the existing disparities between specimens from the same geographical origin.
These results led him to pursue his investigations on the physio-chemical composition of oak, to establish and identify its oenological potential.
