SEGUIN MOREAU, pioneer in the exploration

of the oenological potential of oak

The research carried out by Doctor Pascal CHATONNET has made it clear that the robur oak is superior to the peduncle oak in its contribution to wine.

His work has revealed the diversity of what sessile oak brings to the wine according to its texture, and the existing disparities between specimens from the same geographical origin.

These results led him to pursue his investigations on the physio-chemical composition of oak, to establish and identify its oenological potential.

Mastering the interaction between wines and wood through the appreciation of the oenological potential of oak wood. Application, selection and control of the quality of the staves. (Doctor Pascal Chatonnet)

Setting up of new tools for selecting and adapting the qualitative potential of oak wood in aging wines. (Doctor Pascal Chatonnet).
